In Pastry New Style, the young pastry chef Joeri Vandekerkhove brings traditional techniques and flavours to life with a modern twist. He gives the original recipe of 30 classics, and then presents a unique version of each recipe. The book is not only about original creations, but also about presentation. Joeri likes to work with different textures to make his cakes and desserts even more attractive and to maximise the taste experience.
Pastry chef Joeri Vandekerkhove won the Dutch Pastry Award in 2021. With his food consultancy company Pastry in Motion he develops and optimises recipes.
